This is my second Harsch Fermenting pot. My first one was the 30 liter size. That one I have successfully used to brine poultry,cure pork for bacon and ham, corned beef, made large quantities of pak choi and Chinese/Napa cabbage for kimchi, salted green mangoes, green papayas and various other fruits that Filipinos pickle (buro).
I bought this smaller container ( 10 liter ) for making smaller batches of pickles with recipes that I want to experiment with and either 'improve' or 'perfect' according to personal taste.
These pots are beautifully made and they are perfect for their stated function. Anaerobic fermentation is perfect with the seal completed by adding water to the pot's top. It is a major investment financially, yes, but well worth it if you like to make pickles and do preserving. They are also aesthetically pleasing and quite lovely to look at placed strategically in your kitchen or elsewhere in the home.

I'm so happy to have splurged on this product! I just moved from the city onto my own farm and will be getting lots of use out of this fermentation pot with all my home-grown veggies! So, far I have made Kimchi just to give the fermentation pot a go, and was VERY happy with the results.
The pot is really superb in that you basically toss in your veggies and brine, put in the stones and leave it alone. Just be sure to keep the water groove filled and you have nothing else to do except wait.
I bought the 10 L pot since it was the same price as the 7.5L (and with free shipping). It is really large, but I'm happy I bought the larger size as I have more freedom to adjust the size of the batch of fermented veggies I am making.
The beautiful finish on this pot fits perfectly with my kitchen and everyone in the house loves the little gurgling water noise it makes when "working" -- very relaxing!

Quite expensive but well worth it if you like doing home pickling. I wouldn't suggest investing so much money if you haven't made kraut before. However, my kids love my homemade kraut, and can't even eat store-bought kraut anymore. Homemade kraut has a nice amber tint, and very flavorful. This crock sure beats using a food-safe plastic bucket, a dinner plate and a weight.

Being brand new to fermentation, I was a bit hesitant to spend so much money on a "pot". However, after reading some of the other fine reviews, decided to go ahead and purchase this one rather than the slightly lower cost item. The price difference, after adding in the stone to the cheaper model, was still fairly significant but I'm pleased to report this is an outstanding item. Very heavy, extremely well made and simple to use. Unlike other reviewers I do not have anything to compare it with but given the quality of the piece, feel it should last many years with basic care and maintenance.

The size is very versatile - not so large as to waste food but certainly sufficient for most desired foods.

I've made my first batch of sauerkraut and it turned out great. I especially liked the fact that wild yeast infestation that requires constant skimming isn't required like in open crocks. I did expect the surface to be very smooth and slick based on what I saw in the photos but it turned out to be a little rougher. This isn't a problem and you can tell these crocks are hand made and each one unique which I enjoy after spening some time working with it. I would highly reccomend this product and will be buying more in different sizes.
